Stuffed Palmyra Kernel

Stuffed Palmyra Kernel~

I love palmyra kernel. To me, it’s awesome after coconut kernel. I can eat countless palmyra kernel :D :D Here I tried something different. It tasted good ;) 

Now you tell me how it taste?


Ingredients:
  • 6 pieces of palm shells, 
  • ½ cup of chopped cheese, 
  • 3 tablespoons of cashew nut powder, 
  • 1 tablespoon of chopped raisins.




Directions:
  1. Gently cut the middle of palm shells with a knife.
  2. Mix the cheese with the nuts & raisins and pour it middle of the palm shells.
  3. Then keep it in the refrigerator for ½ an hour to cool.
  4. Now serve the stuffed palm shells on a serving dish and enjoy :) :)

Lychee Rice Pudding/ Payesh

Lychee Rice Pudding/ Payesh~

Bangladeshis are fond of fish as they are of sweet. There are more sweet shops in Bangladesh than there are grocery stores. Bangladeshi rasogollas and sandesh has become a pride and heritage for all Bangladeshis :) :)

Payesh or rice pudding is one of the most common desserts that you’ll see getting prepared in every Bangladeshi household. It is one of the most authentic
Bangladeshi desserts. A Bangladeshi occasion without payesh is yet to be heard of :D :D


Ingredients:
  • 2 liters of milk, 
  • 1 cups of rice, 
  • ¾ cup of mawa, 
  • 2 cups of sugar, 
  • 2 pieces of cardamom, 
  • 2-3 pieces of cinnamon, 
  • ¾ cup heavy cream, 
  • 1 cup of chopped lychee,
  • lychee & grape for garnish.



Directions:
  1. Boil the milk for some time and pour the sugar, cardamom & cinnamon and stir it properly. 
  2. Then wash the rice, drain out the water and put it on the milk after 2-3 minutes. 
  3. When the rice is cooked and the milk is thickened, pour the mawa & heavy cream and stir it occasionally. 
  4. Reduce the heat and cook some time and then pour the chopped lychee, stir it and take it out after 2 minutes. 
  5. Now pour the lychee rice pudding/payesh on a serving dish and garnish it with some lychee & grape and then serve it. 
  6. Now simply enjoy :) :)

Jambul Halwa

Jambul Halwa~

Jambul halwa is a very popular sweet dish all over Bangladesh and is made on religious occasions, such as Shab-e-Barat. This is an easy dessert recipe made with jambul, cardamom, sugar, clarified butter and nuts.

Easy to make and so delicious, jambul halwa is a personal family favorite!



Ingredients:
  • 1 cup of jambul, 
  • 1 cup of water, 
  • 1 cup of corn flour, 
  • 1½ cup of sugar,
  • a dash of cardamom powder, 
  • nuts according to your choice, 
  • ¼ cup of clarified butter.



Method:
  1. At first boil the jambul with 1 cup of water and strain it properly. 
  2. Then mix the jambul water with the corn flour, sugar, cardamom powder & nuts together very well. 
  3. Fry the mixture with the clarified butter on a pan until it leaves the oil & aroma. 
  4. When the halwa is finished you pour it in a tray or plain sheet and cut it (any kind of shape) when it is cold. 
  5. Then place the halwa pieces on a serving dish and serve the jambul halwa and enjoy.

Cumin powder-tamarind drink is very a popular beverage in Bangladesh. It is usually sold by street vendor. Here is a super simple recipe of cumin powder tamarind drink to refresh you after a long day in this summer :)

This chilled drink made from cumin powder-tamarind is one of my favorites. It is tangy and sweet and completely refreshing :)


Ingredients:
  • 2 tablespoons of tamarinds starch, 
  • 1 teaspoon of dry roasted cumin powder, 
  • tablespoons of sugar, 
  • 2 tablespoons of molasses, 
  • 3 teaspoons of lemon juice, 
  • ¼ teaspoon of black salt, 
  • 2 cups of water.





Directions:
  1. Boil 1 cup of water with the sugar & molasses on the saucepan, to make the syrup.
  2. Then mix tamarinds starch with the syrup, lemon juice & rest of the water and stir it properly. 
  3. Then mix the cumin powder & black salt and stir it very well. 
  4. After 10 minutes serve the cumin powder-tamarind drink with ice.

To contemporize this classic, we ramped up the richness: The frosting's flavor is more intensely chocolaty.


Ingredients for cake:
  • 1 3/4 cups all-purpose flour, plus more for dusting
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup freshly brewed hot coffee
  • Instructions for frosting
  • 2 sticks (1/2 pound) unsalted butter, at room temperature
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 1 cup plus 1 tablespoon confectioners' sugar, sifted.




Directions for cake:
  1. Preheat the oven to 160°C. Butter two cake pans and line them with parchment; butter the paper. Dust the pans with flour, tapping out any excess.
  2. In the bowl of an electric mixer fitted with a paddle, mix the flour with the sugar, cocoa powder, baking soda, baking powder and salt at low speed. In a bowl, whisk the buttermilk with the oil, eggs and vanilla. Slowly beat the buttermilk mixture into the dry ingredients until just incorporated, then slowly beat in the hot coffee until fully incorporated.
  3. Pour the batter into the prepared pans. Bake for 35 minutes, or until a toothpick inserted in the center of each cake comes out clean. Let the cakes cool in the pans for 30 minutes and then invert the cakes onto a rack to cool. Peel off the parchment.



Directions for frosting:
  1. In the bowl of an electric mixer fitted with a paddle, beat the butter at medium speed until pale and fluffy. Add the egg yolk and vanilla and beat for 1 minute, scraping down the side of the bowl. At low speed, slowly beat in the confectioners’sugar, about 1 minute.
  2. Set a cake layer on a plate with the flat side facing up. Evenly spread one-third of the frosting over the cake to the edge. Top with the second cake layer. Refrigerate for at least 1 hour before slicing.

Green Mango Juice~

Been craving for green mango juice. This is definitely a super yummy green juice recipe that anyone and everyone will love! It is also very healthy :)


 Ingredients:
  • 2 pieces of green mangoes,
  • 6 tablespoons of sugar,
  • 3 tablespoons of lemon juice,
  • 4-5 lemon wedges; without juice,
  • ½ cup of fresh spearmint leaves,
  • 1 glass of 7up or sprite,
  • 1 glass of cold water,
  • 1 glass of crushed ice,
  • 1 teaspoon of dry roasted cumin powder,
  • 2 tablespoons of finely sliced ginger.



Directions:
  1. Boil the green mango, peel and make into pulp.
  2. Then mix the water, sugar & mango pulp and stir it properly until the sugar dissolved.
  3. Mix 7up or sprite, crushed ice, spearmint, lemon juice, lemon wedges, ginger & cumin powder with the mango pulp juice together properly and keep it some time in refrigerator for cool.
  4. Take it out and serve chilled on a serving grass.

Green Mango Pickle~

Pickle is a necessary side dish in all the Bangladeshi meals. Bangladeshi Cuisine is very famous for its spicy hot pickles. This is a traditional way of making mango pickle recipe at home.


Ingredients:
  • 4 pieces of medium-sized raw mangoes (cut into small pieces with the skin intact),
  • 1 teaspoon of turmeric powder,
  • ¼ cup of finely sliced ginger,
  • 8 pieces of dry red chilies,
  • 2 tablespoons of five seasoning spices,
  • 4 tablespoons of and some more mustard oil,
  • 2 teaspoons of vinegar,
  • ¼ teaspoon of asafetida (hing),
  • 4 pieces of green chilies (chopped),
  • 1 tablespoon of sugar,
  • 2½ teaspoons of salt.




Directions:
  1. Mix the mango with the turmeric, salt, & ginger together very well and put in sun for 4 to 6 hours. Fry the dry red chilies and five seasoning spices until fragrant.
  2. Grind to a coarse powder when cool. Now heat 4 tablespoons of oil and add mango mixture, stir it for 5 minutes. 
  3. Remove from the heat, add vinegar, asafoetida & green chilies and mix it very well. Add sugar and five seasoning spices powder to the mangoes and toss them well. 
  4. Pour the mango pickle into a glass container and add more mustard oil (according to need). 
  5. Mix with a spoon and leave it at a place which receives good amount of sunlight. This pickle is ready to use after 4 days.
  6. For the best result, keep the jar in sunlight everyday for about a month :)

Fruit Tea~

Fruit tea is an exotic drink that is gaining popularity. There are many benefits of drinking fruit tea, as it is packed with assorted vitamins and minerals. They are made from combinations of fruits, herbs and spices. Made in the same way as traditional black tea, fruit is grated and shredded into fine pieces and then dried. Fruit tea provides a fresh and revitalizing cocktail and can be served both hot and cold, depending on the seasons.


Ingredients:
  • 4 cups of water,
  • 2 teabags twining strawberry & raspberry,
  • 10 pieces of sliced strawberries,
  • a handful of dried cranberries,
  • sugar according to taste.





Directions:
  1. Pour the teabag on the hot water pan when it is boiling and stir it for couple of minutes. 
  2. Then pour the other ingredients and stir it properly. 
  3. When it is boiled enough, keep it in the refrigerator to cool. 
  4. Remove the teabag and pour in the glass and serve the cool fruit fusion.

Lemon Drinks~

Having a lemon drinks party? Check out this lemon drinks drink recipe. This lemon drinks oh boy, this mixer is about as essential as it gets. Try to always use fresh squeezed juice!


Ingredients:
  • 10 drops of food color according to your choice, 
  • 10 ml of lemon juice, 
  • 10 ml of sugar syrup, 
  • 160 ml of soda water.

Marzipan Fruits~

These cute marzipan fruits make excellent decorative additions to any dish! Delightful Marzipan fruits they nearly look like the real thing. All the same flavour but in many fruit shapes.


Ingredients:
  • 2 cups of almond meal,
  • 2 cups of icing sugar,
  • 1 piece of egg white,
  • 2-3 drops of rose essence,
  • food color according to need.




Instructions:
  1. Pour all the ingredients on a bowl and mix them with by hand very well until it is a smooth leaven.
  2. Then divide the mixture and make it bite size fruits by hand (any kind of fruits as you like).
  3. Then paint the marzipan fruits with the food color (according to need).
  4. Serve the color full marzipan fruits on a serving dish.

Chelo-Kabab (Kebab)~

Chelow kabab or Chelo kabab is the national dish of Iran. The meal is simple, consisting of steamed saffroned basmati. These kebabs are made with different types of meat. In this chelo kebab recipe, ground beef or lamb can be used. Served on skewers over a bed of rice this recipe is basic, yet full of flavor. The rice is what everyone went crazy for in this dish. This is one fantastic dish that I learnt from my granny. So guys….give thanks to my granny.


Ingredients:
  • 1 cup of onion paste,
  • 2 teaspoons of kabab spices,
  • ¼ teaspoon of saffron threads,
  • 2 cups of lamb minced,
  • 1 teaspoon of black pepper powder,
  • ¼ cup of melted butter,
  • salt according to taste.




Directions:
  1. Take the onion paste through a sieve to obtain the juice.
  2. Then rub the mince meat with the onion juice, & saffron and keep aside for 1 hour.
  3. Now mix the marinated mince with the kabab spices, black pepper & salt and press into kabab shapes.
  4. Then place it into hot grill and brush with melted butter. Cook it until the meat color is golden brown & tender.
  5. Take it out and serve the hot kabab with saffron rice & some salad, according to your choice.

Yogurt-Bengal Gram~

Try out this low fat yogurt-bengal gram recipe. Which is very healthy and super tasty. Goes well in breakfast and evening snacks.


Ingredients:
  • 1 ½ cup of boiled bengal gram, 
  • 1 cup of sour yogurt (strained), 
  • 1 tablespoon of chopped ginger, 
  • 2 tablespoons of chopped spearmint, 
  • ½ cup of chopped onions, 
  • tablespoons of lemon juice, 
  • ½ cup of chopped tomatoes, 
  • ¼ cup of chopped cucumber, 
  • 1 teaspoon of sugar, 
  • 1 teaspoon of black salt, 
  • 1 tablespoon chaat spices,
  • ½ cup of chopped boiled potatoes, 
  • 1 teaspoon of fried red chili powder, 
  • tablespoons of chopped green chili, 
  • 2 tablespoons of mustard oil, 
  • salt according to taste.





Directions:
  1. Mix all the ingredients together properly by hand. Now sprinkle the chaat spices & spearmint on top of mixture.
  2. Serve the healthy yogurt-bangal gram and enjoy.

Crispy Chicken Cutlets~

This recipe creates serious buzz in our home. I am making this recipe on a popular demand ;)


Ingredients:
  • 400 g of minced chicken, 
  • 2 teaspoons of ginger paste, 
  • 2 teaspoons of garlic paste, 
  • pieces of finely chopped green chili, 
  • 4 tablespoons of finely chopped onion, 
  • tablespoon of tabasco sauce, 
  • 1 tablespoon of soya sauce, 
  • 4 tablespoons of chopped spearmint, 
  • 2 teaspoons of corn flour, 
  • 4 pieces of egg white, 
  • ½ cup of flour, 
  • tablespoon of red chili powder, 
  • 1½ teaspoon of black pepper powder,
  • 4 cups of bread crumb, 
  • ½ teaspoon of sugar, 
  • 2 teaspoons of lemon juice, 
  • oil for frying, 
  • salt according to taste.





Directions:
  1. Mix the minced chicken with all the ingredients properly except the oil, eggs, bread crumb, flour, ½ teaspoon of black pepper powder & red chili powder and keep aside.
  2. Then mix the chili powder with the flour on a plate. Now make the cutlet by hand, roll them on the flour mixture and put them on a tray and keep in a refrigerator for some time.
  3. Now mix the egg whites with a little bit of salt & rest of the black pepper powder and beat very well and put the bread crumb on another plate.
  4. Then at first roll the cutlet with the bread crumb, then dip it in the beaten egg; repeat the process again.
  5. Now put them on the tray and keep them in a refrigerator for some time.
  6. Heat the oil on a pan and deep-fry them until the color is golden. Then strain the oil very well before taking out.
  7. Serve the crispy chicken cutlets on a serving dish with any kind of sauce as your choice.

Fruits Jell-0~

If you're secretly hoping for leftovers, these fruits JELL-O recipe is not for you ;)


Ingredients-1:
  • 100 g of crystal strawberry jelly, 
  • 50 of crystal green jelly, 
  • 50 g of crystal orange
  • jelly, 
  • then pour the 3 different colors of jelly powder in 3 different plates and mix with some water by following the instruction written in the packet, 
  • keep it refrigerator until it is chill & compact and then cut into pieces to need.


Ingredients-2:
  • 10-12 pieces of biscuits, 
  • 100 g of condensed milk, 
  • 4-10 pieces of strawberry, 
  • pieces of orange, 
  • 2 pieces of large banana, 
  • 2 pieces of apple, 
  • 1 cup of ripe papaya (cut into cubes), 
  • ¼ cup of strawberry syrup.




Directions:
  1. Take the serving glass and pour some condensed milk on it to rub the inner side of the glass.
  2. Then place the coarsely pieces of biscuit properly and keep it in refrigerator for cool.
  3. Cut the fruits into bite pieces and mix it with the rest of the milk, fruit syrup and pour it on the serving glass and also garnish it with the colorful jelly pieces and keep it refrigerator for some time.
  4. Then serve the cool fruits jello.

Chocolate Milk~

My little sis is at "I-am-going-to-blindly-copy-people-I-like" stage. If few kids do something, she needs to do it as well. On those lines, her latest "coolness" factor is chocolate milk and sandwiches. The other kids are often seen with boxed store bought version and "ingredient-reading" obsessed me feels devastated buying it for her. So I made a deal with her that she would taste my version and if she liked it, she can take that instead.

I was a relieved BiG SiS when she approved it- she loved it in fact making this even better. With all modesty, I have to say that I grin shamelessly with pride when she feels she has to show off her chocolate milk bottle to other kids as well :) And you know the best part? This chocolate milk is ridiculously simple to make and takes much less time (and money) than getting some from the store. This "notreally- a-recipe" recipe is easy to adapt and adopt.


Ingredients:
  • 6 cups of whole milk,
  • 2 teaspoons of chocolate powder (each or to taste),
  • 2 tablespoons of sugar (each or to taste),
  • 6 pieces of clean bottle with tight lid.



Directions:
  1. Take 6 pieces of clean bottle and pour 1 cup of milk, 2 teaspoons of chocolate powder and 2 tablespoons of sugar for each bottle.
  2. Then stir it by spoon properly or blend it on a blender, but I cover the bottle with the tight lid very well and shake it by hand properly until the sugar and chocolate powder is dissolved.
  3. Do a taste test and adjust sugar or cocoa powder if needed. Shake once again. I store this in the fridge until serving time. But you can chill your milk first and then proceed as well. Whatever works for you.
  4. Enjoy on its own or with some cookies :)



Tips:

  • I use Whole Milk. But you can use any milk of your choosing. Its also possible to make this Dairy free and Vegan by substituting with Soy Milk, Almond Milk, Coconut Milk and even Rice Milk. You would need to adjust the remaining ingredients accordingly. I personally haven't tried them except almond milk and love that version as well.
  • You can do the following in a blender. I simply do this in a bottle (with a tight lid) that I use to serve the milk as well. No additional washing of blender for me :)

Minced Meat-Potato Chops~

Potato chops are a perfect snack or an appetizer. Potato chops is a delicious South-Asian recipe served as a snack. Here used minced meat too…..which makes it more tasty :)


Ingredients:
  • 1 cup of minced meat (beef),
  • 1½ cup of mashed potato,
  • ½ cup of onion beresta,
  • 1 teaspoon of black pepper powder,
  • 1 teaspoon of black salt,
  • 1 teaspoon of soya sauce,
  • 1 teaspoon of hot spices powder,
  • ½ teaspoon of ginger paste,
  • ¼ teaspoon of garlic paste,
  • ½ cup of chopped onion,
  • 2 tablespoons of chopped green chili,
  • 2 tablespoons of chopped spearmint,
  • 1 piece of beaten egg,
  • 1½ cup of toast biscuit powder,
  • oil according to need,
  • salt according to taste.



Directions:
  1. At first mix the potato with onion beresta, black pepper powder, salt & black salt together very well and make 8-10 portions and keep aside.
  2. Then boil the minced meat with soya sauce, hot spices powder, ginger paste, garlic paste, a little bit of salt and some water.
  3. Now fry the chopped onion, green pepper, spearmint with some oil on a pan. Then pour the boiled minced meat on the pan; fry and stir it some time and then take it out and let it rest for cool.
  4. Now fill the potato with the stuffing and make the chops according to your preferable shape. Then dip the chops in the beaten egg and roll it with the biscuit powder and deep-fry it until its color is golden brown.
  5. Lastly take it out and serve the minced meat-potato chops and enjoy spearmint sauce.

Strawberry Dessert~

I love strawberry season! I can easily eat a carton of strawberries by myself….in one day. I like them even more when they are put into a dessert! Celebrate summer with this luscious strawberry dessert.


Ingredients:
  • 3 cups of condensed milk, 
  • ¾ cup of sugar, 
  • 3 tablespoons of corn flour, 
  • 2 tablespoons of chopped strawberry, 
  • 2 tablespoons of pistachio-almond-raisins, 
  • ½ teaspoon of strawberry essence.



Directions:
  1. At first mix the milk with the sugar, cornflower & essence together.
  2. Then pour in a pan and cook and stir it very well. When it becomes thick, pour the ½ portions of chopped strawberries, pistachio, almonds & raisins, stir it and take it out from the flame.
  3. Now pour the strawberry dessert on the serving glass and garnish it with the rest of the chopped strawberry, pistachio, almonds & raisin and keep it in the refrigerator for ½ an hour.
  4. Lastly serve the cool strawberry dessert and enjoy.
